I don’t want to go into all the details because it’s too triggering but I’m furious and hurt. She spent the entire time gaslighting me insisting she’d never be interested in him. Meanwhile our mutual friends started excluding me acting strange and clearly taking their side. Turns out they all knew what was happening.
It’s been months and I’m still stuck replaying it over and over. I can’t stop ruminating. I just keep asking myself how could she do this to me?

They aren’t your friends and never were. You did not lose friends. You lost fake manipulative people you were hanging around with, once upon a time.
She is a POS. Period.
Regarding your friends: remove all those people from your life. It will be hard in the beginning, but find new friends. Friends who will stay by your side, who will still choose you, no matter what.
