Why is my ex suddenly so devoted?

I’m in a complicated relationship situation and trying to make sense of something specific.
I just ended a 10-month relationship. Early on my girlfriend became very intense very quickly. After only a few dates she wanted us to be official started posting me publicly and spoke seriously about aligning her life with mine including my values religion lifestyle marriage and family plans.
She quickly began talking about converting learning my faith and becoming the kind of partner she thought I would want.
At first I saw it as love and commitment. It made me feel chosen and taken seriously. But over time I started noticing a pattern. Whenever the relationship felt unstable or when I was close to ending things due to trust issues she would lean even more into faith devotion and our future together. After one breakup and reconciliation she even added a religious quote to her profile.
The confusion comes from the fact that there have also been real trust issues. She has lied about parts of her past maintained contact with men after agreeing to boundaries deleted messages and only admitted certain things after I found evidence. Because of that I’m unsure how to interpret the sudden alignment with my values and religion.
Part of me believes she may genuinely love me and has grown into my faith through the relationship. Another part of me worries she may be mirroring me adapting herself to what she thinks I need in order to not lose me. It often feels like when she senses distance she becomes more emotionally intense more devoted and more aligned with my values.
She has also said very intense things during conflict like that she loves me more than herself and cannot live without me. After I ended things she sent messages that sounded emotionally distressed and potentially self-harm related.
I don’t want to be unfair. I know people can grow and change and I don’t want to dismiss someone’s interest in my faith just because it began through a relationship. At the same time I don’t want to confuse emotional dependency fear of abandonment or mirroring with real stable change.
My questions are:
How do you tell the difference between genuine change and mirroring driven by fear of loss?
Is it a red flag when someone rapidly adopts your values religion and long-term plans early in a relationship?
Can deep love still exist alongside emotional instability that makes a relationship unsafe long-term?
Should I rely more on words and intensity or consistent behavior over time?

me was trusting what happened over months, not what was said during the hardest moments. people can change, i believe that, but i needed steady actions more than emotional speeches. that was the only thing that gave me clarity.
