How did she fall for someone else so quickly?

I was with my girlfriend for five years.
About a month ago she went on a yoga retreat with a friend. I actually encouraged her to go because she had been stressed and overworked for a long time. When she came back she told me she had fallen in love with the island and wanted to move there permanently.
I reminded her that my life work and home were here and that I couldn't just leave. She looked genuinely uncertain. I asked her "Do you still want me in your life?" and she said she didn't know. I told her I'd give her space to think and stayed on a friend's couch for a few days.
Two days later she sent me a message saying she didn't think there was enough room for us to work things out. She said she would be moving out of our apartment in two days. Around the same time she told our friends that I had left and that the relationship was likely over.
Then she told me over the phone that she had fallen for someone she met on the retreat.
A couple of days later she flew back to Greece.
She left most of her belongings behind. Some of her things are still exactly where she left them. Meanwhile I was sleeping on a friend's couch because I couldn't bring myself to go back to the apartment.
What I can't understand is how everything changed so fast. She knew this person for only a few days. According to her they connected over wanting the same future including having children and she felt strongly enough to walk away from a five-year relationship.
The whole thing feels surreal.
There's a lot more to the story but even now the question I keep coming back to is: how does someone fall so hard for another person in less than a week?
